The Story Starts in the Soil 🌱
Long before a coffee bean is roasted, it is growing inside a living landscape.
Coffee trees thrive in the Coffee Belt, the equatorial region that circles the globe between the Tropics of Cancer and Capricorn. Within that broad area, every growing region offers a different combination of altitude, rainfall, sunlight, shade, temperature, and soil.
These conditions influence how a coffee tree grows and how its fruit develops.
Rich, well-drained soil gives the plant access to nutrients. Volcanic soil, clay-rich soil, and soil filled with organic matter can each support different growing conditions. Elevation and cooler temperatures may slow the cherry’s development, allowing the fruit to build sweetness and complexity over time.
The result is not a simple stamp of geography. It is a layered expression of place.
A coffee’s origin can influence whether its cup feels bright and citrusy, floral and delicate, chocolatey and rounded, or earthy and full-bodied. But origin is only the beginning. The way the cherries are harvested and processed determines how much of that potential reaches the final green bean.
A Coffee Cherry Must Ripen First
Coffee cherries do not become flavorful beans overnight.
The fruit begins green, then gradually changes color as it ripens. Many varieties turn a deep red when ready for harvest, although color can vary by coffee species and cultivar. Inside each cherry are usually two seeds pressed together, each covered by layers of fruit and protective material.
Harvest timing is important because ripeness affects sweetness.
When coffee cherries are picked too early, the seeds may taste grassy, thin, or astringent. When fruit stays on the tree too long, it may become overripe and introduce fermented or uneven flavors. Ripe cherries offer the best balance of sugar, acidity, and structure.

From Fruit to Seed
Once harvested, coffee cherries need to be processed fairly quickly. The fruit is delicate, and uncontrolled fermentation can damage the coffee’s clarity and sweetness.
Processing removes the cherry from the seeds and manages the fermentation and drying that follow. The method chosen can change the coffee’s body, acidity, sweetness, and fruit character.
Washed Coffee: Clear and Bright
In the washed process, the cherries are depulped soon after harvest. A machine removes the skin and most of the fruit, leaving a sticky layer called mucilage around the seeds.
The beans then ferment for a controlled period so the remaining mucilage can be removed. After washing, the beans are dried, often on raised beds, patios, or under carefully managed mechanical conditions.
Washed coffees are often associated with clean, defined flavors. Citrus brightness, floral notes, crisp acidity, and a clear sense of origin may stand out in the cup.
The process allows the bean’s natural characteristics to speak with less fruit influence.
Natural Coffee: Sweet and Fruit-Forward
In the natural process, whole cherries are spread out to dry with the fruit still surrounding the seeds.
Workers turn the cherries regularly to encourage even drying and reduce the risk of mold or unwanted fermentation. Once the fruit has dried, the outer layers are removed in a hulling process.
Because the coffee dries inside the cherry, natural coffees can develop pronounced sweetness, heavier body, and fruit-forward notes. Depending on the coffee and the producer’s technique, the cup may suggest berries, jam, dried fruit, wine, or tropical sweetness.
Natural processing can be expressive and vibrant when carefully managed.
Honey Processing: A Gentle Middle Ground
Honey processing begins with depulping, but some mucilage remains on the seed during drying. The name does not refer to added honey. It describes the sticky, honey-like layer left on the coffee.
The amount of mucilage can vary. Different approaches may produce more or less sweetness, body, and fruit character.
Honey coffees often sit between washed and natural profiles. They may offer a rounded sweetness and a gentle fruit quality while retaining more clarity than some natural coffees.
No method is automatically better than another. Each one is a creative and practical choice shaped by the farm, climate, equipment, and desired expression.

Drying Protects the Flavor
After processing, the coffee must be dried carefully.
This stage may seem quiet, but it is essential. Beans that dry too quickly can lose balance. Beans that dry unevenly may develop unwanted flavors or become vulnerable to spoilage.
Coffee is typically dried until it reaches a stable moisture level suitable for storage and transport. During that time, producers spread the coffee in thin layers and turn it regularly. After drying, the coffee may rest in its protective parchment layer before being hulled and prepared for export.
The dried, unroasted seed is now called green coffee.
Green coffee is firm, pale, and nothing like the brown beans you scoop into your grinder. It has the potential for flavor, but it still needs heat to become the coffee you recognize.
Milling and Sorting Refine the Green Bean
Before green coffee reaches a roaster, it is milled and sorted.
Hulling removes the parchment or dried fruit layers that remain after processing. The beans are then graded and inspected for size, density, color, and defects. Stones, damaged beans, broken pieces, and other unwanted material are removed.
Sorting protects consistency. It also helps ensure that the coffee entering the roaster will respond to heat in a more predictable way.
At this stage, the green bean carries the influence of its soil, climate, variety, harvest, and processing method. But roasting will determine how those qualities are revealed.
Roasting Brings the Journey to Life 🔥
Roasting is where green coffee becomes aromatic, brown, and ready to brew.
As heat enters the beans, they lose moisture and begin to expand. Chemical reactions transform the beans’ structure and create the aromas associated with caramel, chocolate, toasted nuts, fruit, spice, and bread.
The Maillard reaction helps develop depth and savory sweetness. Caramelization contributes to brown-sugar and caramel-like qualities. As the roast progresses, the beans reach a stage known as first crack, when built-up pressure causes them to pop and expand.
Roast development must be carefully managed.
A lighter roast may preserve more of the coffee’s origin character, including bright acidity, florals, and fruit. A darker roast may emphasize deeper notes of bittersweet chocolate, toasted sugar, smoke, and spice.
The goal is not simply to roast the beans until they are dark or light. The goal is to find the point where the roast supports the coffee’s natural strengths.
